The blade should be at least 8 inches long, but not over 10 inches. You do not want a small paring knife, nor do you need a giant Samurai sword to cut a tomato! You need the right knife length for the job. 8 inches will be able to cut nearly everything you need, but sometimes that extra two inches is what you need! Keep in mind, the longer the knife, the more expensive it is going to be.

A good chef knife comes from a reputable company and not from your neighborhood 7-11. Be prepared for high prices for each knife!
