Take premarinaded carne asada meat and place into a shallow bowl. If your meat (can be flap meat, top sirloin, New York, filet mignon or other similar cuts of meat) is not seasoned, season to taste with black pepper, salt, crushed red pepper and minced garlic. This will give the meat much more flavor and will make the dish that much more wonderful.

Take your lime wedges and squeeze the juice over the meat. Make sure that the meat is evenly covered with lime juice and your seasonings from step one. Refrigerate your meat for 20-30 minutes to allow the seasonings to settle in and marinate.

Take out your meat after marinating and cut into small thin strips. This will make the meat cook quickly and will make the tacos easier to eat.

Heat your oil in a large cast iron skillet on high heat. Place your marinated and now cut up meat into the skillet and saute for just a few minutes to make sure the meat is properly cooked to standards. Once cooked, place on a plate with a dry paper towel to allow excess fatty oils to drain.

To serve, place down your tortillas on your plate first. They can be corn or flour (make this dish your own!). We've found that steaming your tortillas in a tortilla steamer makes this dish so much better.

After this, place down your steak, then cheese and let the combination melt for 30 seconds. This is to ensure the cheese is melted to perfection.

Top with avocado, sour cream, jalapenos, salsa and shredded lettuce. Squeeze a little bit of lime juice over the top of your tortillas, and you are done! Enjoy!
