Bacon and Cheese Nachos!




This amazingly simple recipe for Irish Nachos is a cinch to cook at home anytime and is super tasty! Made with bacon, green onions, and sour cream, this recipe will knock your socks off!

  • 1 bag Waffle Fries
  • 1 package Bacon
  • 1/2 cup Sour Cream
  • 1 cup Colby-Jack Cheese
  • 3 Green Onions

Cook up a batch of waffle fries in the oven at 425 for about 30 minutes or fry them in oil until golden, brown, and delicious! We did the oven method. Its quick, easy, and a lot less messy!


While the fries are in the oven, cook up your bacon until nice and crispy. When your bacon has cooled a bit, chop it up roughly on a cutting board and set aside for later.


Chop up your green onions and get those tasty waffle fries out of the oven! Turn off the oven, but close the oven door to keep the heat in. We aren't done with it yet! Place the fries in a oven safe dish and sprinkle on the cheese. Then layer on your crumbled bacon. Place the delectable mixture into the still hot oven until the cheese is nice and melty!


Take out the fries and add a huge dollop of sour cream and your chopped up green onions. Scoop yourself out a heaping portion and enjoy!
