1 Onions Minced
4 cloves Garlic Minced
1 14.5 ozcan Fire Roasted Diced Tomatoes
6 cups Chicken Broth
1 bunch Cilantro Chopped
2 Chicken Breast Shredded
1 Lime
2 cups Tortilla Chips
1 cup Colby-Jack Cheese

Chicken Tortilla Soup

Amazing Mexican Flavors!




This easy homemade chicken tortilla soup recipe is great for a evening meal or just a quick lunch!  It is easy to make and tastes great!  The fresh chicken and vegetables really bring out the excellent flavors of this soup!

I a pot, boil the chicken with 1 cup of water and 1 cup of chicken broth until it shreds easily. Put aside. Chop up your onions, garlic, and cilantro. Put aside.


In a large pot, add the onions with a little bit of oil and saute until translucent. Add the garlic and cook for 1 more minute. Pour in the tomatoes and chicken broth and bring to a boil.


Add some shredded chicken to a bowl. Ladle on some of the soup mixture. Add a squeeze of lime, some cheese, and your cilantro. Garnish with a tortilla chip or break them up and sprinkle them on top. Enjoy!
